4 large ripe bananas with tiger skin
4 mandarins
1 organic lime
1 cinnamon stick
4 tbsp. to s. old rum
80 g of sugar
20 g of butter

Steps

Step 1

Peel the bananas; take the zest of lime; press the mandarins.

2nd step

Melt butter and sugar in a skillet over medium heat until you get a light caramel. Add bananas, zest and cinnamon stick. Flip the bananas to caramelize on all sides; let caramelize 2-3 min while monitoring the coloring.

Step 3

Add the tangerine juice, cook for 10 minutes over low heat. Add the rum out of the heat, flambé in the pan, serve bananas and juices immediately.
