ingredients
4 large peaches from here quite firm
4 tomatoes
400 g boneless shoulder or saddle of lamb
8 small branches of thyme
3 tablespoons olive oil
1 tablespoon liquid honey
Grilled pepper
Flower of salt
Steps
Step 1
Preheat the oven to 170 °.
Peel the peaches , remove the stones and cut into slices 1 cm thick.
2nd step
Wash the tomatoes and cut into slices.
Mince the lamb in thin slices. Rinse 8 sprigs of thyme and dry.
Step 3
Mix 2 tablespoons of olive oil with the liquid honey.
Arrange sliced peaches, tomatoes and lamb in a lightly oiled gratin dish, alternating. Season with salt and pepper, add the sprigs of thyme and sprinkle with the mixture of oil and honey.
Step 4
Bake and cook for 40 minutes.
Serve immediately
