Tip n ° 1: I reduce tomato skins powder

We are happy to taste peeled tomatoes in a salad, a sauce ... But what about the skin, if they are organic only? I dehydrate it for 3 hours in the oven at 100 ° C, then preserve it in a jar. I chop it, according to needs, to use its concentrated taste as a spice, with fleur de sel, in a marinade ...

Tip # 2: I make a cucumber cocktail

I use the ribbons of skins to flavor a very nice drink: I mix them with the leaves of 4 branches of mint, the juice of 1/2 lime and some ice cubes. I pour in a glass and complete with sparkling water (and a dash of gin, or rum to remind the mojito ) ... To consume very fresh!

Tip n ° 3: I transform the tops of beetroots into a spicy stir-fry

I sauté red pepper seeded and minced with garlic and olive oil. I add the vines rinsed and dewatered, salt and pepper, and I blow them 2 min approx. to wither, no more. Top with a grill !

Tip 4: I use shrimp shells to flavor a laksa

This spicy Asian soup is very simple: the wok is made from laksa (in jars) with shells and a little oil. I add coconut milk, lime juice, fish sauce , I simmer 15 minutes, then I filter and I add pre-cooked rice noodles, soy sprouts and fresh coriander.

Tip 5: I press my oranges but do not throw the skin

It gives softness and fragrance to a cake: boil 1 h 15 covered 4 half-oranges, adding water if necessary. They are mixed, then 5 beaten eggs, 200 g of almond powder, 180 g of sugar, a little yeast, and cooked for 40 minutes at 180 ° C. Delicious with a chocolate sauce ...
