ingredients

1 small red onion
170 g asparagus 2 eggs2 egg whites
2 tablespoons fresh cheese
40g of rocket
2 tablespoons lemon juice
2 tablespoons capers

Steps

Step 1

Preheat the grill. Oil a small skillet, heat and fry 1 min 1 minced red onion.

Add 170 g asparagus, trimmed and cut into 2 cm sections.



2nd step

Make them jump 2 min. Meanwhile, mix 2 eggs, 2 egg whites and 2 tbsp. to s. light cream cheese in a salad bowl.

Pour the mixture into the pan and bake for 5 minutes until the bottom of the frittata is golden brown.

Step 3

Put the pan under the grill for 5 minutes to finish cooking.

Season 40 g rocket with 2 tbsp. to s. of lemon juice and 2 tbsp. to c. capers, drained and rinsed. Serve the frittata with the salad.
