ingredients

33 cl of Elle & Vire wholemeal cream
2 bags of 17 cl of UHT Elle & Vire whole cream
2 cantaloupe melons
1 melon from Spain
7 tbsp. to s. mint syrup
2 grenades
1 sheet of gelatin
1 bunch of fresh mint

Steps

Step 1

In advance. Open the melons, remove the skin and pips, cut into small cubes. Peel the pomegranates, collect the seeds. In a salad bowl, mix the fruits. Shoot and book cool.

2nd step

Prepare the mint cream. Soak the gelatin in cold water. Heat the mint syrup and, off the heat, add the drained gelatin. Mix well. Whip the cold cream with a pinch of salt, to obtain a firm whipped cream. Mix the heavy cream with mint syrup. Carefully add the whipped cream and reserve in the fridge.

Step 3

A few minutes before serving. Divide the fruit in the cups, decorate with cream and mint leaves. Do not serve your fruit too cold to appreciate the flavor.

tips

To buy well. Choose heavy melons, scented, whose peduncle is ready to come off: ripe, they are full of sugar!

Cantaloupe melon. Its bark is smooth and its flesh is orange. It is sweet, juicy and very fragrant.

The melon of Spain. With its green bark and white flesh, it is a little less fragrant than cantaloupe but more crunchy.
