ingredients

225 g raspberries
1.5 cuil. to c. of orange blossom water
4 sprigs of mint
2 yolks 2 egg whites
3 dl of milk
20 g of flour
20 g of sugar
20 g icing sugar

1 big 1 small salad bowl
1 medium saucepan
1 hand whip
1 electric hand whip
4 glasses of 2 dl

Steps

Step 1

In advance : heat the milk. At the same time, beat the yolks and the sugar in smooth cream. Add the flour, beat again. Gradually pour in the hot milk, turning constantly to dilute. Heat in the pan, turning constantly with a hand whisk until you get a thick cream. Let cool. Add the orange blossom water. Let cool.

2nd step

Assemble: beat the whites, a pinch of salt and the icing sugar with an electric whisk until you get a very firm mousse. Mingle with cream, turning up and down with a spatula; go deep down. Keep cool.

Step 3

Serve : fill the glasses with moss by sowing raspberries as you go. Put some raspberries and a sprig of mint on top of the glass.

tips

Variants. • More classic: replace the orange blossom with 1 tsp. to s. shaved vanilla sugar. • It's the season: the recipe is delicious too with wild strawberries.
