ingredients

400 g of pitted black cherries
120 g of smoked duck breast
100 g ardi gasna (Basque cheese with raw sheep's milk: a slightly flattened ball with firm dough and kisses crust)
1 sachet of baking powder
200 g flour
5 eggs
10 cl of milk
1 branch of fresh thyme
1 pinch of salt
1 pinch of Espelette pepper

Steps

Step 1

Preheat the oven to 180 ° C (item 6).

2nd step

Cut the duck breast into strips and the sheep cheese into cubes.

Step 3

In a salad bowl, mix the flour and the yeast, add the eggs and the milk until you obtain a smooth paste.

Step 4

Add the duck breast, sheep cheese, cherries, thyme, salt and Espelette pepper.

Mix well. Pour this mixture into the buttered mold.

Bake and cook for 40 minutes. Let it cool down before unmolding.
