200 g of mozzarella
2 small eggplants
1 small jar of mashed (or caviar) dried tomatoes
50 g pine nuts
350 g of pizza dough
5 cl of olive oil
3 cl of sunflower oil

Steps

Step 1

Preheat the grill in the oven.
Cut the end of the eggplants, then slice them into slices.
Place them on the baking sheet covered with baking paper, drizzle with olive oil, salt and pepper.
Cook under the grill for 5 minutes on each side (watch that they do not burn!).

2nd step

At the same time, brown the pine nuts a few min in the frying pan without fat, let cool.
Drain, cut the mozzarella into slices.
On a floured plan, spread the pizza dough by hand.
Cut out discs with an individual tart pan returned.

Step 3

Heat the sunflower oil in a large skillet. Place the discs, cook for 4 minutes.
Return to the spatula, spread the tomato caviar, cover with mozzarella and eggplant, cook another 6 minutes.
Sow the pine nuts, serve immediately.
