1 roll of broken dough
800 g weighed pumpkin peeled
30 g grated Parmesan cheese
1 tbsp. to s. fresh thyme leaves
1 egg white
1 tbsp. to s. of virgin almond oil
Steps
STEP 1
With the dough unrolled on its paper, line a 22 cm diameter mold. Cover with a second sheet of paper, then a good layer of dried vegetables; make them rise well against the edges. Stitch the dough through the paper, place at least 10 minutes in the fridge and preheat the oven to 180 ° C (tea 4). Bake 10 min. Remove vegetables and paper, brush generously the egg white background, re-encrust 3 min.
2ND STEP
During this time, peel and cut the pumpkin in small cubes. Put them in a large saucepan with 2 dl of water, salt, close, cook 10 min. When the dice are soft, remove the lid, let all the water evaporate. When the dice begin to fall, take off the fire. Let cool. Add Parmesan, 1/4 of the thyme, pepper well with the black pepper of the mill.
STEP 3
Sow 3/4 thyme on the crust. Spread the pumpkin. Bake 5 min. Remove from the oven, wait 2-3 minutes, spread the almond oil gently with a brush, enjoy.

To change a little: replace the almond oil with virgin peanut oil, pine nut or simply with olive oil.
