ingredients

Olive oil

For croquettes
250 g of rabbit shoulder
70 g candied ginger
100 g of shitakes
20 g of saté powder
60 g white onion
50 g of artichoke cream
30 g of Chinese cive
20 g Thai cilantro
20 g Thai basil

For the condiment
100 g white onion
150 g pepper
20 g red pepper
1 clove of garlic

For frying
breadcrumbs
1 liter of peanut oil

 

Steps

Step 1

Prepare the stuffing. Cut the rabbit into pieces. Slice the shitakes, onion, cive, ginger, coriander and basil. Brown the shitakes with 2 tbsp. to s. olive oil. Reserve them and, in the same pan, fry the rabbit. Once cooked, mix it. In a bowl, combine all the ingredients. Do not salt too much, the saté already contains salt. Book in the fridge.

2nd step

Prepare the condiment. Slice the vegetables, fry them with 2 tbsp. to s. olive oil.

Cover and cook slowly for 15 minutes. Mix with the cooking juices.

Step 3

Fry. With the stuffing, form balls of about 30 g, roll them in breadcrumbs. Heat the oil to 180 ° C, plunge the croquettes for 2 minutes for cooking and coloring. Serve with the condiment separately.

tips

You can substitute shitakes, Chinese cive, cilantro and Thai basil with more common Paris mushrooms and herbs such as chives, coriander and basil. The croquettes will be less exotic but just as greedy!
