ingredients

600 g cod fillets
350 g of mozzarella
2 eggplants
3 small zucchini
3 red peppers
2 tbsp. to s. chopped garlic
2 lemons
2 large spoons. to s. finely chopped basil
2 large spoons. to s. fine chopped parsley
1 good pinch of Provence herbs
Olive oil

Steps

Ratatouille millefeuille with cod

Keep cool.

Prepare the vegetables: without peeling, slice eggplants and zucchini into long strips. Cut in 4, seed, flatten the peppers. Lightly oil the cod fillets and place them in the steamer basket. Cut the mozzarella into thin slices.

25-30 min before serving: oil, heat the grill. Add eggplant, pepper and zucchini in one layer (in several batches), cook on both sides; keep crunchy zucchini and pepper. 15 min before serving, cook the fish for 10 minutes steaming.

Stack on plates or on a vegetable dish, mozzarella, leafless fish.

Enjoy tepid, generously seasoned with sauce.
