ingredients

2 zucchini
3 carrots
2 turnips
1 small red pepper and 1 yellow
200 g green beans
4 eggs
1 handful of arugula.

For the sauce:
1 lemon
1 small bouquet of tarragon
some basil branches
1 sprig of rosemary
6 half-dried tomatoes
4 tbsp. to s. olive oil
2 tbsp. to s. of pumpkin seed oil
1 pinch of fleur de sel.

Steps

Step 1

Clean zucchini, carrots, turnips and peppers, and slice them finely (except beans). Place carrots, then turnips, peppers and zucchini in the basket of a steamer first. Cook for 15 minutes (vegetables should remain crisp). Then the beans steamed 8 min. And the eggs 5-6 min (depending on their size). Mix all the vegetables . Wash and squeeze the arugula.

2nd step

The sauce: take the zest on half of the lemon, chop it finely. Squeeze the two halves of lemon. Chop the herbs and half tomatoes. Gather the ingredients of the sauce and mix .

Step 3

Divide the arugula into the bottom of the plates, arrange the dome mixture of vegetables, sprinkle with the sauce and place an open boiled egg over it.
